2 tablespoons freshly squeezed lemon juice
2 tablespoons soy sauce
2 teaspoons dark Asian sesame oil
2 teaspoons honey
1 teaspoon minced fresh ginger
1 teaspoon minced garlic
2 1/4 teaspoons salt
1 1/4 teaspoons freshly ground white pepper
8 ounces prewashed baby spinach, stemmed, and roughly chopped
2 carrots, sliced into ribbons with a vegetable peeler
1/3 cup mixed fresh parsley, cilantro, and tarragon leaves
Four 6-ounce skinless flounder fillets
Preheat the oven to 375??F.
