(15 g ) flour3 eggs, slightly beaten2 tbsp. (30 ml) milk1 tsp. (5 ml) vanilla extractDirections:Mix the graham cracker crumbs and 3 tbsp. (38 g) of sugar together in a large (9-inch or 23 cm) pie pan.Mix in the melted butter and then press the crumb mixture into the pan by gently using an inverted cup. If desired, a sheet of wax paper can be placed over the crumbs and one's hands can be used to carefully press the mixture into the pie pan.Bake the graham cracker crust for 10 minutes at 325* (163*C).Meanwhile, beat together the cream cheese and the 3/4 cup (150 g) of sugar.Add the flour, eggs, milk and vanilla extract to the cream cheese and sugar. Beat it well until there are no lumps and the mixture is creamy.Then pour the mixture into the pie crust and if desired, dust the top with a sprinkling of graham cracker crumbs.Bake for 10 minutes at 450* (232*C) and then reduce the temperature to 250* (121*C). Bake for another 25 to 30 minutes, or even a little longer. The cheesecake is done when the center is firm, not runny, but don't over bake it. Cool the cheesecake on a rack. Serves 10-12.This wonderful dessert can be eaten as is, or topped at serving time with strawberry, raspberry or blueberry syrup. It can also be garnished with whipped cream and berries. Another great way to present the cheesecake to dinner guests is to squiggle chocolate syrup on the dessert plates first, then place the cheesecake slices on them. Squirt the chocolate syrup once again on the tops of the slices, and add a raspberry or two. Afterwards, store any leftovers in the refrigerator, but there probably won't be any!
