Nourishing Vegetable Broth with Spiced Paneer


Need a super quick mid-week meal? This Nourishing Vegetable Broth with Spiced Paneer is perfect. It is vegetarian so it is great if you are wanting a meat-free meal and the spices in it make it is yummy and warming. You can mix up the vegetables used in the ingredients just use up whatever you might have in the fridge at the time. Super easy and super tasty!

Nourishing Vegetable Broth with Spiced Paneer

This simple soup is nourishing and warming. Homemade or pre-bought paneer can be used.

Serves: 2-4


1 tablespoon ghee or coconut oil 1 small brown onion, finely sliced 2 cloves garlic, crushed teaspoon cumin powder teaspoon turmeric powder teaspoon coriander seed powder pinch chilli flakes head broccoli, cut into florets and stems cubed 4 cups vegetable broth 1 large handful english spinach leaves salt and pepper 1 quantity paneer, cubed (Spiced Paneer Recipe) Coriander/cilantro leaves and green onion to garnish


In a large pot, melt the ghee over medium heat. Add the onion and garlic and cook until the onion is soft. Add the spices (cumin, turmeric, coriander and chilli flakes) and stir through for a few minutes until fragrant. Add the broccoli pieces and stir through, allow to cook for another few minutes. Add the vegetable broth and bring up to gentle simmer. Simmer for 5 minutes or until the broccoli is just tender. Take off the heat and stir through the english spinach leaves. Add salt and pepper to taste. Serve in bowls topped with the paneer and sprinkled with coriander leaves and spring onion.
