Video Recipe: Ground sardines Tagine

Moroccan okra Tagine Recipe:


350-gram Okra

500 grams chunk tender beef

1 large tomato, grate your tomato

1 onion (medium)

1 Garlic Clove

A bunch of fresh parsley

1 teaspoon of ground ginger

¼ teaspoon of ground turmeric

Real Moroccan saffron (a pinch)

Salt & pepper as desired

1 tablespoon tomato paste

3 tablespoons olive oil

Cooking Directions:

First, we start by preparing the ingredients:

Chop: The onion, parsley.

Grate: garlic clove, tomato.

Then we cook the meat first: medium heat on your large pot, add olive oil.

Once heated we add chopped onion and garlic.

Mix to brown evenly for about 2 minutes.

Then we add the spices: Salt & pepper, Ground ginger, turmeric.

Mix all the ingredient and continue cooking for about 5 min.

Now we add the meat by placing the meat pieces in the pot with the onion and mix all together.

We need to brown the meat from both sides for abut 5 min each side to absorb the flavor.

Then we cover the meat with water.

Apply medium to high heat.

Cover the pot, cook the meat for about 70min. (check on the meat from time to time I would say maybe every 20 min) stir and add water when necessary so the pot doesn’t dry out on you.

When the meat becomes tender, we add the tomato paste to the onion sauce and meat.

Keep mixing for maybe another 10 min until the meat is all done and cooked.

Now we prepare our Okra:

Rinse the okra with fresh water.

Cut the small tip from the top

With your knife, scrub the sides of the okra to get rid of the small okra skin hairs on each side!

Wash all the okra after the above steps.

Add the okra to the cooking pot and cover.

Cook the okra for about 15min until the okra is softened.

Once done, Serve your tagine right away, this dish is good when consumed hot!
