Downtown Orlando is a haven for talented, local bands to play. If the show you're going to see ends at a decent time (around 8:00), the area also has some great restaurants that may look expensive from the outside, but are actually quite affordable. Crooked Bayou is one of these restaurants and it will catch your eye, because there are plenty of people eating outside cajun chicken enchiladas generally having a good time. I used about 2 lbs of chicken (bone-in simply because that is all I had) with an onion and a bit of red pepper, plus some chicken broth and spices. Cooked perfectly in 15 minutes. I just had to remove it from the bone and shred it and it was set to be served. I adhered to a slow cooker hole chicken that stated to cook it on low for eight hours, but I utilized the pressure cooker function for 15 minutes and it was juicy and yummy. I can't recommend this item enough.

I added 3 times as much water to the beans just to be safe, (poured off the extra when done and measured it, could have only used twice as much rather than three times as much and it would have been the correct quantity). From dry beans to properly cooked in approximately 30 minutes. My next attempt was a pork sirloin and it was great also, about as tender as you can most likely get a pork sirloin. My third attempt was some chicken fajitas.
First, heat the oil in a skillet, preferably cast iron, of course, over medium heat. Add onions and garlic and cook until onions are translucent. Scrape the mixture into the pot and add the chicken. Mix the other ingredients, then pour over the chicken. Cook on Low four to six hours, or on High for two to three hours. When the chicken is no longer pink, discard the bay leaf, add salt and pepper to taste, and serve. Put chicken on a bed of rice for a complete meal.
Lastly, this is a great stew recipe to use if you attend Sunday afternoon worship services. Get the stew going in the slow cooker in the morning and when you come home from church, you'll have a tasty, nutritious autumn stew waiting for you.
